Flying Fish Roe also know as Tobiko.

Tobiko is the Japanese word for flying fish roe.

It is most widely known for its use in creating certain types of sushi.

Flying Fish Roe sizes range from 0.5 to 0.8 millimeters in size, the naturally red-orange eggs have a mild smoky or salty taste, with a note of sweetness and an especially crunchy texture.

For comparison, tobiko is larger than masago (capelin roe), but smaller than ikura (salmon roe).

Tobiko can be infused with other natural ingredients to change its color and flavor.
